I just cooked this recipe last night. This is the third time I have made this. Last night I served it as a side dish but I have also added chicken to it and served it as an entire meal.
Add oil to bottom of medium sauce pan, add Quinoa, onion, green pepper and garlic. Let cook until onion and pepper get soft. Add tomato paste, spices and water. Bring to a boil. Cover and simmer for 30 minutes. Add more water if needed.
