Egg, Cheese and Spinach Fritatta

I’ve made this recipe before for dinner and then most recently to feed a large group for breakfast. Its quick, easy and uses any scraps you may have lingering in your kitchen. I bake mine in a Nordic Ware dutch oven. You can also bake it in any oven safe dish or cast iron cookware.


  • 8 Eggs
  • 1 whole chopped onion
  • 1 5 oz packet of frozen chopped spinach
  • 1 whole green pepper chopped
  • 1 cup of cheese (I’ve used feta, pizza cheese, any shredded cheese)
  • 4 tbsp of bread crumbs
  • Pinch of salt
  • Pepper to taste


Preheat oven to 450 degrees F. Pan cook your onions and green pepper in butter until soft. Place frozen packet of spinach in the microwave, thaw, squeeze as much water out of it as possible and place in pan with onion and green peppers. Transfer to a bowl and let cool.

Whisk eggs, salt, pepper, bread crumbs until blended. Add onion, green pepper and spinach to eggs and stir in cheese. Once well blended pour into your oven safe dish.

Your eggs will rise so make sure whatever you are using gives about an inch around all edges. Poke with a knife to make sure it is cooked through and you have a nice brown layer on top.

Serve with a side of meat and sprinkle it with some sriracha sauce.
