Black Bean and Lentil Soup

I made this the other day with extras I had laying around my kitchen. It was delicious, too good not to share!

I used Red Mill Brand beans/lentils :

  • 1 cup of dry black beans
  • 1 cup of dry lentils
  • 8 cups of water (I used chicken broth but you can also add bullion for flavor)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 tbsp of minced garlic
  • 2 serrano peppers (optional), chopped
  • 1 28 oz can of diced tomato
  • 1 tbsp of Chili Powder
  • 1 tbsp of Cumin
  • 1 tsp of Paprika
  • 2 tsp of Roasted Red Pepper
  • Salt, to taste
  • Pepper, to taste
  • I added cubed chicken, meat is optional. Pan cook meat all the way before adding to pot.

Option 1: Stove Top Recipe

Add bean/lentils and water (broth) and let boil in water for 45 mins to 1 hour or until beans become soft.

Skip this if you used canned beans: Add all ingredients and cook for several hours

Option 2: Crock Pot

Add beans/lentils and water (broth) and let cook on warm for several hours until beans become soft. Add all ingredients and cook on high for 3-4 hours.
